An Everyday Soy “Meal Solution”

ONE OF OUR ULTIMATE “MEAL SOLUTIONS*” IS A SOY FRUIT SMOOTHIE.
Two minutes and 250 calories later you have a quick breakfast (that is road ready), a light lunch or a 4 p.m. healthy snack. For many people, convenience is a major priority when it comes to food choices. A soy smoothie combines convenient and “good” carbohydrates (fruit) with a convenient protein (soy). In addition, homemade smoothies do not contain the added sugar, preservatives and chemicals you find in ready-to-eat selections. Okay, you will have to shop ahead and buy soymilk, orange juice, bananas and frozen cut fruit. Or you can freeze one-inch chunks of overripe bananas and fresh fruit bought in season. Whatever your preference, vary the variety of the fruit and make extra to share with loved ones.

FRUIT SMOOTHIE

Serves 1

1 cup vanilla soymilk
½ large banana (about ½ cup)
2 tablespoons orange juice or other fresh fruit juice
¼ – ½ cup frozen raspberries or strawberries

  1. Place all ingredients in blender and purée until smooth. Add ½ cup crushed ice. Blend for 20 seconds. Serve immediately or refrigerate.

Variations:
Try other fruits such as pineapples, blueberries, peaches, melons, mango, and papaya for different taste combinations. Cut fruit into small pieces before blending.

On a hot day, add ½ cup crushed ice with the fruit and blend for a chilled smoothie.
